The richest seas in the world are off Troms. Cod, halibut, monkfish and coalfish are abundant, and shrimps and shellfish get succulent and firm in the cold waters of the north. Reindeer, moose, grouse, goat and sheep meat smell and taste of heather, birch and green grass.
In January to March, the cod spawns along the coast and mølja, the roe, liver and flesh of the cod mixed together, is a local favourite. Shellfish and shrimps are at their most succulent in winter. In summer, coalfish (saithe) is the favourite. In the autumn, look out for game.
